Crock Pot Lemon Garlic Chicken

Prep Time: 10-15 mins   Cook Time: ~6 hrs 

While I find that I use my crock pot less & less as the weather gets warmer, this dish has all the spring feels. And I also love how simple, healthy & flavorful it is. 

 

You can have a little fun by adding in or removing different veggies (I know mushrooms aren't always a crowd pleaser) but it's pretty basic & delicious every time! I love it served over rice with a side of greens!

Ingredients

  • 1-2 pieces of chicken per person (boneless or on the bone)

  • 1 head of garlic broken apart but not removed from skin

  • 2 sweet onions

  • 1-2 packages of mushrooms

  • 1 lemon

  • olive oil

  • 1/3 cup liquid - broth, white wine, water)

  • fresh herbs (sage, thyme, parsley)

  • salt, pepper, paprika, Italian seasoning

directions

  1. Turn on the crockpot & drizzle some oil at the bottom.

  2. Slice one onion in wedges & put in the crockpot along with a few cloves of garlic.

  3. Layer the chicken on top.

  4. Cut the other onion & layer along with the mushrooms & more garlic cloves.

  5. Drizzle with more olive oil & seasoning.

  6. Add the herbs & juice from the lemon along with some lemon zest.

  7. Add the liquid.

  8. Place the lid on the crockpot & allow to cook at least 4-6 hours, mixing occasionally.

  9. Season to taste.

  10. ENJOY!
