Crock Pot Lemon Garlic Chicken
Prep Time: 10-15 mins Cook Time: ~6 hrs
While I find that I use my crock pot less & less as the weather gets warmer, this dish has all the spring feels. And I also love how simple, healthy & flavorful it is.
You can have a little fun by adding in or removing different veggies (I know mushrooms aren't always a crowd pleaser) but it's pretty basic & delicious every time! I love it served over rice with a side of greens!
Ingredients

1-2 pieces of chicken per person (boneless or on the bone)

1 head of garlic broken apart but not removed from skin

2 sweet onions

1-2 packages of mushrooms

1 lemon
-
olive oil
-
1/3 cup liquid - broth, white wine, water)

fresh herbs (sage, thyme, parsley)

salt, pepper, paprika, Italian seasoning
directions

Turn on the crockpot & drizzle some oil at the bottom.

Slice one onion in wedges & put in the crockpot along with a few cloves of garlic.

Layer the chicken on top.

Cut the other onion & layer along with the mushrooms & more garlic cloves.

Drizzle with more olive oil & seasoning.

Add the herbs & juice from the lemon along with some lemon zest.

Add the liquid.

Place the lid on the crockpot & allow to cook at least 4-6 hours, mixing occasionally.

Season to taste.
