Pork Carnitas

Prep Time: 10 mins   Cook Time: ~6-8 hrs 

So many things I love about Pork Carnitas....

There are so many different ways to enjoy it - on it's own, in a wrap, on a salad, on nachos, leftover...

And I love a meal that takes just a few minutes to set up & cooks on it's own!

This is a super basic recipe...feel free to add in or swap any seasonings you desire!

(This an also be made in a pressure cooker or the oven if you prefer not to use a crockpot).

Ingredients

  • ~4 lb pork shoulder

  • 2 large onions sliced

  • 1 bunch of cilantro

  • 1 tbsp apple cider vinegar

  • juice from 2-3 limes 

  • ~1/4 c orange juice (optional) - can also use juice from 1 orange

  • ~1-2 tbsp olive oil

  • salt & pepper (to taste)

  • 1 tbsp+ paprika

  • 1 tbsp+ chili powder

  • 1-2+ tsp cumin

directions

  1. Combine seasonings in a small bowl.​

  2. Season pork shoulder with the spice mixture coating all sides.

  3. Drizzle a little olive oil in the bottom of the crock-pot, then place the onions & pork in the crock pot. 

  4. Add the juice from the lime, apple cider vinegar & orange juice.

  5. Roughly chop some of the cilantro & add leaving most for close to the end.

  6. Cover & cook on low 6-8 hours or high 4-5 hours.

  7. Using 2 forks, shred the pork. (You may need to remove the pork in order to do this).

  8. Once pork is shredded, mix to coat with the juices & add any more desired seasonings to taste as well as plenty more cilantro.

  9. Place on low or warm until ready to serve.

  10. For a cripsier texture, place the carnitas onto a baking sheet & broil until a slight crisp forms, maybe 3-5 mins.
