One Dish Chicken & Eggplant

Prep Time: 10 mins   Cook Time: ~35-40 mins 

You may have heard me say it before that I've been on a mission to come up with as many easy, delicious & healthy meals as possible...& if it can be made in one dish, pot, pan...even better!

This Chicken & Eggplant dish checked all the boxes. 

I bought the Trader Joes Eggplant & Garlic with Roasted Pepper spread but you can use any tapenade or a plain or flavored hummus, even pesto!

The flavor is amazing & the chicken always comes out tender. And it tastes great as leftovers too!

Ingredients

  • 1-2 packs of thin sliced chicken breast (I usually aim for 2 per person)

  • 1 medium/large eggplant sliced into rings ~1/4-1/2 in. thick

  • 1 jar of your spread of choice (see above)

  • ~1-2 tbsp olive oil

  • salt & pepper (to taste)

directions

  1. Preheat oven to 350

  2. Lay the eggplant flat in a baking dish (it's ok if it overlaps a bit).​

  3. Drizzle with olive oil & add some salt & pepper.

  4. Lay the chicken flat on top of the eggplant. 

  5. Smear the spread all across the top of the chicken.

  6. Add a little more salt & pepper to taste (optional).

  7. Bake in the oven for 35-40 minutes or until chicken is cooked through.

  8. Serve over a bed of arugula or with a little rice or pasta on the side.

  9. ENJOY!
