Mediterranean Chicken

Inspired by Greek food, which we love in my house, this dish will not disappoint!
Ingredients

1-2 packages chicken on the bone ( I use a mix of breast, thigh & sometimes drum sticks - ~ 2 pieces per adult, 1 per child)

3 cloves garlic roughly chopped

2 white onions sliced
-
1 bag small yellow potatoes (can slic in half if desired but no need)

1 large jar pitted kalamata olives (including liquid)

2 large or 3 small jars artichokes in seasoned oil
-
juice from 1/4-1/2 lemon
-
1-2 tbsp oil
-
fresh herbs or Italian seasoning /oregano

salt & pepper, paprika to taste
directions

In a large pot (like a Dutch Oven) heat the oil to coat the bottom of the pan over med/low heat.

Add half the onions & garlic.

Add the chicken & top with remaining onions & garlic.

Add in the potatoes.

Pour in the jars of olives & artichokes including the liquid.

Squeeze in the juice from the lemon
-
Add the herbs & seasonings.

Place the lid on & allow to cook for ~40-45 mins, mixing on occasion & until chicken is cooked through & potatoes tender.
