Mediterranean Chicken

Balanced & nutritious

Inspired by Greek food, which we love in my house, this dish will not disappoint!


  • 1-2 packages chicken on the bone ( I use a mix of breast, thigh & sometimes drum sticks - ~ 2 pieces per adult, 1 per child)

  • 3 cloves garlic roughly chopped

  • 2 white onions sliced

  • 1 bag small yellow potatoes (can slic in half if desired but no need)

  • 1 large jar pitted kalamata olives (including liquid)

  • 2 large or 3 small jars artichokes in seasoned oil 

  • juice from 1/4-1/2 lemon

  • 1-2 tbsp oil

  • fresh herbs or Italian seasoning /oregano

  • salt & pepper, paprika to taste


  1. In a large pot (like a Dutch Oven) heat the oil to coat the bottom of the pan over med/low heat.

  2. Add half the onions & garlic.

  3. Add the chicken & top with remaining onions & garlic.

  4. Add in the potatoes.

  5. Pour in the jars of olives & artichokes including the liquid.

  6. Squeeze in the juice from the lemon

  7. Add the herbs & seasonings.

  8. Place the lid on & allow to cook for ~40-45 mins, mixing on occasion & until chicken is cooked through & potatoes tender.
