Mango Avocado Corn Relish

Ok...I've got the #1 recipe for Summer '21. And I am banking on the fact that it's gonna be a memorable one! 

This dish makes a perfect dip, side, or topping for fish & chicken. It's light & refreshing, colorful, fun & has all the summer flavors!

If you're planning to host or attend a lot of BBQs this summer like I am, this is the one recipe you'll need!


  • 1 mango diced

  • 1 avocado diced

  • 1+ cup frozen corn

  • a little red onion (~1/4 of a small onion)

  • cilantro chopped (plenty)

  • juice from 1/2 lime

  • drizzle of olive or avocado oil

  • salt, pepper, dash of paprika



  1. Place the mango, avocado, corn, onion & cilantro in a bowl.

  2. Drizzle a little oil & add the lime juice & seasoning & mix well.

  3. Top with a little more cilantro.

  4. ENJOY!

**Whenever I make a dip with corn, I use frozen corn & let it sit together with the other ingredients. It keeps the dip cold & holds up nicely.
