Egg Roll in a Bowl
Prep Time: 10-15 mins Cook Time: 20 mins
This is a great meal for a busy night when you haven't planned ahead to set up a crockpot. Everything still goes in one pot, but this cooks in minutes. Even better, you can buy most of the veggies already shredded!
If you enjoy dishes from all around the world, this definitly has a fun, Asian flair!
Ingredients

1-2 packages (~1 lb but can adjust for your needs) grass fed beef or turkey chopmeat

1 onion
-
3 cloves of garlic

2 bags shredded slaw or cruciferous mix (look for cabbage, carrots etc.)

1-2 tbsp oil - I used a little sesame oil + coconut oil
-
~1/4 c coconut aminos (or low sodium soy sauce)

salt & pepper to taste

grated ginger (optional)
directions

In a large pot (like a Dutch Oven) heat a little of the oil to coat the bottom of the pan.

Brown the meat & mash until it crumbles. (If too much grease, you can drain a bit, but it will make for great flavor).

Add the onions & garlic & cook until slightly tender.

Add the slaw & mix well.

Pour in the coconut aminos & the remaining sesame oil.

Add a little salt & pepper if needed.

Saute until desired tenderness.

Grate a bit of ginger if desired.

Serve over rice.
