Apple Crisp

Prep Time: 10 mins   Cooking Time: ~40-50 mins

Who doesn't love a little warm apple crisp topped with some vanilla ice cream?!?! I spent all last fall trying to perfect this recipe. I may still have a little tweaking to do, but I'm pretty happy with it as it is! There's nothing like the smell of apples cooking in your oven and this certainly does the trick!

Ingredients

  • 5 apples chopped

  • 2 tbsp coconut sugar 

  • juice from 1/2 lemon

  • 1/4 c organic brown sugar

  • 1 1/2 c oats

  • 1 c flour (I used mostly almond & oat flour)

  • 2 tbsp ground flax

  • 1/2 c chopped nuts (optional)

  • 1/2 c cold grass-fed butter

  • coconut oil (optional)

  • cinnamon

  • dash of salt


 

directions

  1. Preheat oven to 350°.

  2. Grease a baking dish with butter or non-stick cooking spray.

  3. In a mixing bowl, place chopped apples, coconut sugar, lemon juice, and cinnamon.

  4. Stir to combine then transfer to baking dish.

  5. In a separate mixing bowl, add the flour, oats, nuts, brown sugar, cinnamon, salt, and diced cold butter.

  6. Use a fork to cut the butter into the flour mixture until it becomes crumbly.

  7. Pour the mixture over the diced apples and spread evenly. Place four small dollops of coconut oil on top of the mixture.

  8. Bake about 40 to 50 minutes or until golden brown. 

  9. ENJOY!
