Chocolate Chip/ Walnut Craisin Cookies

Even as a teenager I liked to bake. I would make these cookies constantly for my high school boyfriend (& for my best friend who would give them to her boyfriend & pretend she made them).

I used to follow the original Nestle Toll House recipe because let's be honest, it's the best, but have since upgraded it a bit. I've found you don't need nearly as much sugar & I love using flours other than refined white flour to add in nutrients & avoid a blood sugar spike.

I promise these won't disappoint.

Most of the time I make them using chocolate chips but during the holidays I like to use walnuts & craisins. White chocolate chips or crushed candy canes are a popular addition as well! 

Ingredients

  • 2 1/4 c almond + brown rice flour

  • 1 tsp baking soda

  • 2-3 tbsp ground flaxseed

  • 1 tsp salt

  • cinnamon

  • 1 c butter softened (it does work using 1/2 coconut oil)

  • 3/4 c brown sugar packed

  • 1/3 c organic coconut sugar

  • 2 tsp vanilla extract

  • 2 eggs

  • ~1 cup walnuts chopped

  • ~1/2-3/4 c craisins

  • or 1+ c chocolate chips

directions

  1. Preheat oven to 350.

  2. Line 2 baking sheets with parchment paper

  3. Beat butter a mixer or large bowl until smooth. 

  4. Add the sugar & beat again.

  5. Add the eggs one at a time

  6. Add in the vanilla

  7. Combine flour, baking soda and salt in small bowl.

  8. Add the flour mixture little by little until well combined.

  9. Drop by rouned tablespoon or small ice cream scooop onto the cookie sheets.

  10. Bake 9 mins or until slightly golden brown.

  11. Allow to cook completely before storing.
