Cauliflower Leek Soup
Prep Time: 15 mins Cook Time: ~20 mins
Soup is such a comforting food, most of the time leaving you feeling nourished. This soup will not only do that but incorporates so many of the veggies & spices that naturally support detox in the body.
It's super simple to make & the flavor is amazing. I love a soup that tastes great on the spot & tastes just as good leftover!
This recipe was inspired by Fed & Fit with just a few tweaks I made. Enjoy!
Ingredients

2 heads cauliflower broken into florets

3 leeks, cleaned & chopped

1 onion
-
3-4 cloves of garlic chopped
-
2 cartons chicken or veggie broth (about 8 cups)

1 can pure coconut milk
-
~2 tbsp cocont or olive oil
-
a few leaves of sage
-
a few sprigs of thyme
-
salt & pepper
-
~2-3 tsp turmeric
-
a bit of grated ginger

In a large pot, saute the onion & garlic in the olive oil

Once the leeks have been cleaned, chop & add to the pot.

Add in a little salt & pepper & cook until tender & slightly browned.

Pour in the broth & mix.

Add the cauliflower, herbs (sage & thyme) & a little more salt & pepper.

Place the lid on & cook about 15 mins. or until cauliflower is tender.

Pour in the coconut milk.

Using a hand blender, blend the soup until smooth. (If no hand blender, remove soup from heat & place in regular blender in batches. Then return to the pot).

Top with a little more of the herbs.
