Candied Walnuts

My first year of teaching I was given Candied Walnuts as a gift from a family with a recipe attached. They were soooo good & I began making them for everyone & bringing to Christmas parties.
I've since lost the recipe, but I created a new one & they unfortunately are super addicting! But they are a fun & festive treat for a holiday party or a great little pick me up when you just need something sweet!

Ingredients

  • 1 c walnuts halved, not chopped

  • 1 tbsp butter or coconut oil

  • 1 tsp vanilla extract

  • 2 tsp coconut or organic brown sugar

  • cinnamon

  • nutmeg or pumpkin spice works well

  • dash of salt

directions

  1. Melt the butter & coconut oil in a pot or shallow pan.

  2. Remove from heat once melted & add the vanilla.

  3. Pour in the walnuts & stir until coated.

  4. Sprinkle in the sugar, spices & salt & mix well again.

  5. Lay flat on a parchment-lined surface & allow to cool & sugar to set.

  6. Store in your favorite holiday bowl.

  7. ENJOY! (but be careful because they are addictive!)

  1. Heat the frozen fruit in a small pan stirrling occasionally.

  2. Using the back of a fork, mash the fruit intil deisred consitency.

  3. Stir in the maple syrup.

  4. Remove from heat & add the chia seeds.

  5. Mix well & allow to congeal slightly. 

  6. Place in a seal tight mason jar & store in the fridge for at least 10 minutes before using.

  7. ENJOY!
