Broccoli Cobb

I feel like lunch gets the least thought sometimes. I don't know about you, but if I don't have something prepared for lunch I can stare at my fridge, feel helpless & end up eating something I either don't want or that does nothing for me. 

Coming up with simple, easy to prep ahead lunch ideas has been a priority of mine for the past few years.

This Broccoli Cobb came about when I felt like I was in such a rut with the same old lunches.

I love the texture & flavor & it's super filling due to the fiber & protein it contains. Be sure to make some extra dressing because it goes well with any salad!


  • 1 small head of broccoli

  • 1 can chickpeas

  • 1 tomato chopped or 1/2 container of grape tomatoes cut in halves

  • 2 hard-boiled eggs diced

  • 1/2 avocado

  • red onion (optional)

  • Creamy Avocado dressing (see below)

  • Salt, Pepper


  1. Chop the raw broccoli into small pieces and place in a bowl with chickpeas, tomato and 2 hard-boiled eggs (diced).

  2. Top it with the Creamy Avocado dressing.

  3. Add a little salt, pepper & other desired spice.

  4. Store in a seal tight container in the refrigerator

  5. ENJOY!

Creamy Avocado Dressing


  • 1 ripe avocado

  • 1/4 cup olive oil

  • juice from 1/2 lemon

  • 1 small clove garlic

  • Salt Pepper


  1. Place all ingredients in a blender and blend until smooth.

  2. Store in a sealed jar in the refrigerator.

  3. ENJOY!
