Broccoli Cobb

I feel like lunch gets the least thought sometimes. I don't know about you, but if I don't have something prepared for lunch I can stare at my fridge, feel helpless & end up eating something I either don't want or that does nothing for me.
Coming up with simple, easy to prep ahead lunch ideas has been a priority of mine for the past few years.
This Broccoli Cobb came about when I felt like I was in such a rut with the same old lunches.
I love the texture & flavor & it's super filling due to the fiber & protein it contains. Be sure to make some extra dressing because it goes well with any salad!
Ingredients

1 small head of broccoli

1 can chickpeas
-
1 tomato chopped or 1/2 container of grape tomatoes cut in halves

2 hard-boiled eggs diced
-
1/2 avocado
-
red onion (optional)
-
Creamy Avocado dressing (see below)

Salt, Pepper
directions

Chop the raw broccoli into small pieces and place in a bowl with chickpeas, tomato and 2 hard-boiled eggs (diced).

Top it with the Creamy Avocado dressing.

Add a little salt, pepper & other desired spice.

Store in a seal tight container in the refrigerator

Creamy Avocado Dressing
Ingredients

1 ripe avocado
-
1/4 cup olive oil
-
juice from 1/2 lemon
-
1 small clove garlic
-
Salt Pepper
directions
-
Place all ingredients in a blender and blend until smooth.

Store in a sealed jar in the refrigerator.
