Blueberry Oat Crumble
Prep Time: 15 mins Baking Time: ~20-25 mins
I cannot take complete credit for this recipe...before I knew about the save feature on Instagram, I would screenshot delicious recipes I wanted to try. But the screenshot would often leave out important information like, what the recipe was actually for or who it was by!
Anyway, I made some little tweaks & put in my own spin & was very pleased with how it came out! I've been enjoying this for both breakfast & a snack!
Ingredients

2 cups oats

2 c flour (I combined almond & oat)

3 tbsp ground flaxseed

2 tsp baking powder
-
1 scoop vanilla protein powder (optional)

cinnamon
-
dash of salt
-
1/2 cup applesauce
-
~1/4 c almond or coconut milk
-
1/4 c coconut sugar or organic brown sugar (maple syrup should work as well)
Berry Chia Jam:

1 cup frozen berries (or fresh)

1 tbsp maple syrup (more if you like it sweeter)

2 tbsp chia seeds

Preheat oven to 350.

Line a baking dish with parchment paper

Combine all of the dry ingredients in a bowl. Add the applesauce & milk & mix until well combined.

Lay 2/3 of the mixture flat into the baking dish.

Add a layer of blueberry mixture.

Top with the remaining oat mixture.

Sprinkle a little extra cinnamon on top.

Bake for about 20-25 mins.

Allow to cool & then ENJOY!

Heat the frozen fruit in a small pan stirrling occasionally.

Using the back of a fork, mash the fruit intil deisred consitency.

Stir in the maple syrup.
-
Remove from heat & add the chia seeds.
-
Mix well & allow to congeal slightly.

Place in a seal tight mason jar & store in the fridge for at least 10 minutes before using.
