Black Bean Sweet Potato Burger

Don't get me wrong, I love a good juicy burger (there was a period of time where they were a forbidden food for me) & I love the iron it provides. But I also like to incorporate plenty of plants into my diet & give myself a break from meat once in a while.
These Black Bean Sweet Potato burgers are SO GOOD you won't even miss the meat! Packed with flavor, filling & satisfying, they can be set up ahead of time & go great topped with some guacamole over some greens or with a side of veggies.
I promise you won't be disappointed!
Ingredients

1 small sweet potato chopped

1 can blacks beans rinsed

1/4 red onion chopped small

1 clove garlic

1/2 cup cooked quinoa or brown rice

salt pepper, paprika, cumin
Add-ins:

Prepare the guacamole.

Preheat oven to 400 or grill - (if grilling I recommend using a mat).

Place the chopped sweet potatoes on parchment-lined baking sheet and bake approximately 25-30 mins or until tender.

Remove and cool.

Meanwhile, heat at least 1 tbsp of coconut oil in a pan and add the garlic and onion.

Pour the rinsed beans into a bowl and mash with a fork.

Add the cooked garlic and onion, sweet potato (some can be saved as a side) rice and seasoning and continue to mash.

Mix very well and form into patties.

Place on the baking sheet used for the sweet potatoes and bake for at least 20 mins.

Top with some guacamole or avocado.

Enjoy with a side salad or other greens.

Makes 3-4 burgers.
