Banana Bread

When I got married my sister made me a beautiful scrapbook/cookbook filled with recipes from all of my family & friends. One recipe was for a basic banana bread. I started making it over & over & each time I would tweak it just a bit. As I learned more & more about healthy flour alternatives & ways to add in a little more fiber & nutrients, this banana bread evolved & has become somewhat famous among my family & friends, so much so that I probably make it almost every week!
We enjoy it as breakfast or a snack, but it certainly doesn't last long! I hope you enjoy it as much as we do!
(Oh and I rarely make a single batch so I gave the measurements that will yield 1 loaf + 1 tray of mini muffins or ~2 trays of regular sized muffins.)
Ingredients

3-4 ripe bananas

3 tbs honey or 1/4 c sugar (I typically use coconut)

2 tbsp melted butter

2 tbsp coconut oil
-
2 eggs
-
3 cups flour (I mix almond flour and brown rice flour)

1/4 cup ground flaxseed

2 tsp baking powder
-
1 tsp baking soda
-
1 tsp vanilla (or I use 1 scoop of vanilla Complete protein powder)

Cinnamon
Add-ins:
-
Chocolate chips
-
Blueberries
-
Walnuts

Preheat oven to 350.

Melt the butter & stir in the coconut oil.

Meanwhile, place the bananas in a mixer or large bowl & mash

Add the sugar.

Once mixed, add the cooled melted butter/coconut oil mixture & then the eggs one at a time.

In a separate bowl combine all the dry ingredients.

Slowly add to the banana mixture.

Once well mixed, add chocolate chips or other add-ins. (Feel free to top with more add-ins!)

If making muffins, bake for ~16 mins. If making a loaf, bake approximately 30-35 mins or until center is cooked through.

Allow to cool & then ENJOY!
