Baked Chicken Parm

Prep Time: 10 mins   Cook Time: ~35 mins 

Chicken Parm is quite possibly one of my favorite comfort foods & brings me right back to my childhood. Growing up, my mom always baked her chicken Parm & it was the talk of the town. Besides being a healthier alternative, it also is less time-consuming & creates less mess. And that's what I'm all about!

It goes so well with pasta, a salad, & tastes great leftover too! 

Ingredients

  • thin-sliced chicken breast or thicker chicken sliced in half across the middle (enough for 1-2 pieces per person)

  • ~1 c breadcrumbs (more may be needed) I love Aleias GF breadcrumbs!

  • 1-2 eggs

  • tbsp olive oil

  • ~2 tbsp Pecorino Romano cheese (optional)

  • 1/2 c tomato sauce

  • mozzarella cheese

  • salt, pepper, Italian seasoning

directions

  1. Preheat oven to 350.

  2. Line a baking sheet or dish with parchment paper.

  3. Prepare the chicken by trimming & slicing to desired thickness.

  4. Place the breadcrumbs in a bowl with the cheese & a little seasoning.

  5. In another bowl, beat the eggs with the olive oil & a little salt & pepper.

  6. Using a fork or tongs, coat the chicken in the egg mixture, then coat in the breadcrumb mixture.

  7. Lay flat on the baking sheet & place in the oven for ~20 mins (longer for thicker chicken) or until chicken is cooked through, but not dry. 

  8. Using a spoon, spread a little sauce on each piece of chicken, then sprinkle with mozzarella.

  9. Return to the oven for 5-10 mins or until cheese is nicely melted.
